The two Takayama Festivals - mid-April and early October - book the town solid a year out: quote festival dates only with hotels already held. Winter is deep snow country and quietly magical.

How many nights does Takayama need?
Two nights, arriving by afternoon: evening one for the old town at dusk after day-trippers leave, the full day for morning markets, Sanmachi's breweries and merchant houses, and Shirakawa-go in the afternoon. One-night versions spend most of both days in transit.
Takayama and Kanazawa, or one of them?
They chain naturally - the Hokuriku loop runs Tokyo, Kanazawa, Shirakawa-go, Takayama, then Nagoya or Kyoto. If forced to choose: Kanazawa for gardens-and-culture clients, Takayama for small-town atmosphere and food clients.
Is Hida beef genuinely worth building a meal around?
Yes. Served as steak, sushi-style on rice crackers at market stalls, and in hoba-miso leaf-grilled form. A Hida beef dinner is the anchor booking of the stay; the street-food versions cover lunch for a few hundred yen.
